Coconut Rice Noodles (Thengai Sevai)

1 Cup grated coconut
3 Cups of cooked rice sevai
10-12 Curry leaves 
1/2inch Ginger finely chopped
3 Long green chilies slit
1tp Mustard seeds
2tps Urad dhal seeds 
2tps Broken gram dhal (Broken chickpeas)
3tbs Fried groundnuts 
3tbs Oil
Pinch of Asafetida*
Finely chopped coriander leaves
Salt to taste

Heat oil in a pan and add the mustard seeds.

Wait till they splutter, then add the Urad dhal and Broker gram dhal and fry them in the oil till golden brown. Add the green chilies, ginger, asafetida and curry leaves and saute for 2 minutes.

Add the groundnut and the grated coconut and saute over medium heat for 1 minute. Add salt to taste and the cooked rice sevai and mix continuously for 2-3 minutes more. Remove from fire, garnish with finely chopped coriander leaves and serve.
