Lunchbox Veggie Wraps

1/2 cup finely chopped sun-dried tomatoes packed in olive oil, drained
1 cup shredded carrots
1 yellow bell pepper, seeded, cut into matchsticks
1 tablespoon finely grated lemon zest
1-1/2 cups store-bought hummus or Roasted Red Pepper Hummus
4 whole grain tortillas

In a medium-sized bowl, combine tomatoes, carrots, bell pepper, and lemon zest.
Spread hummus on the tortillas and top with vegetable mixture.
Roll tortillas around filling. Wrap with plastic wrap for easy lunchbox packing.
