Rich Bolognese Sauce

1 small bag of soy mince;
1 small onion;
1 large tin of chopped tomatoes;
4 table spoons of tomato puree;
half a tea spoon of oregano;
half a tea spoon of basil;
1 large glass of red wine;
1 tea spoon of chili sauce;
1 clove of garlic;
2/3 table spoons of olive oil;
quarter of a tea spoon of sugar;
salt and pepper to taste;

Chop the onion in to small bits and fry in the olive oil for 5
minutes then add the soy mince, fry the mixture together for another 5
minutes . Add the tin of tomatoes, puree, garlic , red wine , chili
sauce ,basil , oregano , sugar , salt and pepper . Boil the mixture for
5 minutes hard stirring. This is done to boil off the alcohol in the
wine . Simmer for about 25 minutes until the liquid has almost gone
(you may need to add a bit of water as it simmers to make sure it
doesn't dry out completely.

This sauce gets better with age so if you can keep it over night in the
fridge before eating you're a winner .

Serve with pasta or mashed potatoes, or my favorite in between two
slices of hot buttered brown toast . This is pure comfort food , rich ,
low fat and filling YUMMY !
