Cauliflower souffle

* 1 suitably sized cauliflower;
* 3 eggs;
* 1/2 tablespoon flour;
* 1 cup milk;
* 2 tablespoons butter;
* A heaped teaspoon of salt;

Boil the cauliflower in salted water, drain when ready and put aside. Mix the butter with flour and fry it off, gradually add the milk. Stir constantly not to make lumps. Add the yolks one by one and don't stop stirring.

Leave to cool. Meanwhile, beat the egg whites until foaming. After the mixture has cooled, add the foam. Grease a pan with butter and place the cauliflower. Pour egg mixture over it. Sprinkle a little salt and bake at medium heat. Serve hot.
